Walnuts are one of Iran’s valuable orchard and dried fruit products. Thanks to their distinctive flavor, unique texture, high nutritional value, and versatile applications, Iranian walnuts have an important position in both domestic and international food markets. Iranian walnuts are cultivated in different regions of the country under diverse climatic conditions and offer considerable variation in fruit size, shell shape and color, kernel color, kernel yield, oil content, texture, and flavor. Walnut kernels are commonly available as whole halves, pieces, or chopped kernels and are widely used in confectionery and chocolate products, cakes and bakery products, ice cream, breakfast foods, salads, and other food products. Walnuts can be supplied either in-shell or as kernels in different grades, sizes, and quality levels according to the requirements of the target market.
